Short Bread Base

with mixed berries and honey

This is the recipe for a short bread galette base. I do not love berries but I made this recipe frequently with almond butter and chocolate chips. You can use any topping to sweeten it up!

Dough Ingredients:

  • 1 cup oat flour

  • 1 cup almond flour

  • 1/2 cup cassava flour

  • 4 eggs

  • 1/2 coconut oil

  • 1/4 cup maple syrup

  • 1 tsp vanilla extract

  • 1.5 teaspoon baking powder

Recipe:

Combine all flours and baking powder in a food processor and pulse a few times, so all flours mix. Add all 4 eggs, and maple syrup and pulse a few times. Then add vanilla and melted coconut oil. Pulse until forming a crumbled dough.

Press the dough 1- 1.5 inch thick in a pie tin or glass baking dish.

Bake on 350 for 20 minutes, until sides start to brown. 

Cut like a pie and top with your favorite berries (or chocolate like me) and honey!
