Honey Butter Oat Cinnamon Rolls
These are some of my favorite go to weekend breakfasts! Best for having house guests.
Ingredients:
4 cups oat flour
3 eggs
1/2 cup almond milk
1/3 cup coconut oil
3 tablespoons apple cider vinegar
3 tablespoons maple syrup
1 tsp baking powder
1/2 teaspoon baking soda
1 cup almond butter
1/3 cup honey
2 tablespoons cinnamon
Recipe:
Mix together eggs, apple cider vinegar, maple syrup, and almond butter together.
Melt the coconut oil for 30 seconds (until liquid) and mix into the liquid mixture.
Gradually add the Oat Flour, baking powder, and baking soda into the liquid mixture until it forms a sticky dough.
Next you are going to roll out your dough. Take two pieces of parchment paper and lay one piece down, then place all of your dough on this piece. Cover the dough with another piece of parchment paper and roll the dough out. Roll the dough out so that is about 1/3 inch thick and a rectangular shape.
Mix together the honey, cinnamon, and almond butter. Evenly spread this mixture on to the flat dough.
Now you are ready to roll! Roll the dough laterally (as if you are folding your paper hamburger style). It should roll about 6-8 times. Slice the dough in about an inch and a half pieces.
Place your pieces on a baking sheet and press each cinnamon roll down just slightly.
Bake on 350 for 12-15 min. Make sure not to cook too long or they will get dry on the outside.
Remove and drizzle with honey, maple syrup, or date syrup and enjoy!
