Juji’s Chicken Apple Salad

One of my favorite go to fall salads

Super filling and equally delicious

Recipe:

  • Arugula (several handfuls)

  • Granny Smith Apples (1 peeled and chopped)

  • Avocado (generally 1/2 of a large avocado)

  • Shredded Chicken (about one chicken breast worth)

  • Slivered Almonds (a hand full)

  • Olive Oil, Balsamic Vinegar, Salt, and Pepper (to taste)

The measurements listed are for a single serving salad (see picture above). Double/triple/ whatever you feel like for your lunch or dinner.
