Coconut Chai Energy Balls

with mint tea and my favorite book

Ingredients:

1/2 cup softened dates

1/2 cup shredded unsweetened coconut

1/2 cup almond butter

1/4 cup hemp seeds

2 tablespoons almond flour

2 tablespoons chia seeds

2 teaspoons chai powder

1.5 teaspoons vanilla extract

1/2 teaspoons cinnamon

Recipe

Soak dates in water over night or in warm water for about half an hour.

Combine dates, vanilla, and almond butter in a food processor and process until the dough is smooth.

Add shredded coconut, almond flour, chai, cinnamon, chia seeds, and hemp seeds. Process until fully incorporated, may need to stop and scrape the sides a few times.

Form balls about the size of a quarter. Roll in extra coconut shreds.

Refrigerate in a closed container until cold and eat!
