Chewy Coconut Granola Bars
Recipe:
4 egg whites
3 1/2 cups rolled oats
1 cup coconut flakes (unsweetened)
1/2 cup hemp hearts
1/3 cup almond butter
1/3 cup liquid sweetener of choice (I used date syrup because it is less sweet than honey or maple syrup)
1/3 cup chocolate chips (I used Hu Gems, but mini chocolate chips work really well for these)
1/4 cup melted coconut oil (or avocado oil)
1/4 cup sunflower seed butter
1 teaspoon vanilla extract
a pinch of salt
Set oven to 350F. Mix all ingredients together using an electric mixer.
Poor all ingredients out on to a baking sheet lined with parchment paper. Then press so the large dough ball turns into a rectangular shape. Press the rectangle until about 1/8 of an inch thick. Then, using a large knife cut them into preferred serving sized (DO NOT SEPARATE).
Bake for 12 minutes at 350F on the middle rack. Remove and cool! Store at room temp in your container of choice.
