Classic Breakfast Cookies

Breakfast cookies

These are my absolute favorite cookie to eat anytime of day. These are my go to breakfast, snack, or dessert. Easy and simple! If you are eating them after they have cooled, I like to warm then in the microwave for 20(ish) seconds to get them warm and soft.

Ingredients:

  • 3 mashed bananas

  • 3.5 cups of rolled oats (quick oats also work well)

  • 3 egg whites

  • 1/2 cup almond butter

  • 1/4 cup hemp seeds

  • 1/4 cup chia seeds

  • 1/4 cup chocolate chips

  • 1 teaspoon vanilla extract

  • 1 teaspoon cinnamon

  • 1 teaspoon baking powder

  • 1/3 cup Date Syrup or Liquid Sweetener of choice (optional)\

Directions:

Mash bananas in a large bowl with the back of a fork until few/no chunks remain. Mix in the almond butter.

Next, with a hand mixer mix in the oats and seeds. After fully mixed add the egg whites, cinnamon, vanilla, and baking powder.

If you would like them sweeter add the date syrup and chocolate chips.

Once sweetener is throughly incorporated form your cookies on a baking sheet. Bake for 8-10 minutes on 350 and enjoy!

They are best eaten that day or the next and microwaved if eaten cooled.
