Coconut Oat Cookies with Carmel Chips

Refined sugar and flour free delicious treat!

Ingredients:

2 cups oat flour

2 eggs

3/4 cup shredded coconut

3/4 cup almond flour

1/2 cup coconut sugar

1/3 cup coconut oil

1/4 cup caramel chips

1/4 cup chocolate chips

1 tsp baking powder

1 tsp vanilla extract

Recipe:

Preheat oven to 350 degrees.

Combine slightly melted (softened but not liquid) coconut oil, coconut sugar, and vanilla in a mixing bowl.

Add two eggs. Add almond flour, coconut shreds, and baking powder. Finally incorporate oat flour (you can process your own oat flour, but store bought will be more refined).

Add caramel and chocolate chips. I use lily’s caramel chips and dark chocolate chips.

Form medium sized cooked and bake for 11-13 minutes.

Cool and eat!
