Fresh Garden Salad With Chicken and Ginger Tahini Dressing

This is a fresh lunch that is perfect for these hot summer days. This salad is perfectly filling. Leaving you full, but not left feeling hot and overwhelmed by food and heat. This is one of my favorite go to lunches.

This is a fresh lunch that is perfect for these hot summer days. This salad is perfectly filling. Leaving you full, but not left feeling hot and overwhelmed by food and heat. This is one of my favorite go to lunches.

Ingredients:

  • 1 chicken breast (I often use chicken left over from dinner the night before)

  • 1 large English cucumber

  • 1/2 an avocado

  • 2 large carrots

  • purple onion

  • 1 generous spoonful of hemp seeds

Dressing:

  • 2 tablespoons tahini

  • 1 large lemon (juice of this lemon)

  • 1 teaspoon honey

  • 1/4 teaspoon garlic granules

  • 1/4 teaspoon ground ginger

  • salt and pepper

Recipe:

Combine all dressing ingredients in a mason jar and shake to throughly incorporate.

Wash all vegetables. Peel the cucumber and carrot. Continue to shred the carrot with the vegetable peeler. Thinly slice the cucumber. Thinly slice the purple onion and add however much you like. (onion is a very strong flavor, some people like a lot and some people don’t like it at all). Slice your cooked grilled chicken and avocado.

Add all ingredients to your plate/bowl. Sprinkle with hemp seeds and drizzle with dressing. Eat!
