4 Ingredient Grilled Onion and Black Bean Dip

This is my healthy twist on an onion and bean dip.

A perfect appetizer for any taco Tuesday or Summer BBQ, and can even be a great side dish to top off a burrito.

Ingredients:

  • 2 large yellow onions (about 1 cup)

  • 1 cup heirloom tomatoes

  • 1 can black beans

  • 1/2 cup grated cotija cheese

  • Cilantro to garnish

Recipe:

Dice your onions into small pieces and grill on the stove with a little bit of olive oil on high until they are golden brown. Remove from heat and allow to cool.

While your onions are caramelizing, turn your oven on 400 degrees. Slice your heirloom tomato into halves or quarters (depending on your size and preference) and put them on a baking sheet with olive oil, salt and pepper. Roast for 15 minutes. Remove from heat and allow to cool.

Drain and rinse your black beans.

Add black beans, cooled onions, and tomatoes in a bowl and mix. Gently mix in your cheese and top with cilantro.

Eat! This is best served with sweet potato tortillas or Siete lightly salted chips.
