Fudgy Half Baked HEALTHY Brownies

Truly Healthy and SO delicious!

NO refined sugar, flour, butter, oil, dairy, and they’re VEGAN

These are everything you are looking for in a brownie, and you can eat pretty much all of them in one sitting and not feel sick! Don’t let healthy deter you they were devoured by all the college boys in my house and everyone wanted more.

Ingredients:

  • 2 cups of pitted dates

  • 3/4 cup of unsweetened Calif almond milk (or non dairy milk of choice)

  • 1/4 cup cocoa

  • 1/4 cup coconut flour

  • 2 tablespoons Tahini

  • 2 tablespoons ground flaxseed

  • 1 tsp vanilla extract

  • 1/2 baking powder

  • 1/2 baking soda

Recipe:

In a food processor blend the softened, pitted dates for 20 seconds until they form a ball. Add 1/2 cup almond milk and process for 2-4 minutes, stopping to scrape the sides, so that all ingredients are mixed. Do this until it forms a creamy looking paste.

Scrape the sides. Add the tahini, flax seed, cocoa and process until chocolate is incorporated. Add vanilla, coconut flour, baking powder, and baking soda and process for 30 seconds. Add remaining (1/4 cup almond milk) and process for another minute.

This next step is optional but it makes it easier, so the brownies do not fall apart when you cut them. You can bake them in a normal brownie/cake pan, but muffin tins are easier.

Spray a muffin pan with coconut or olive oil spray. Fill 3/4 of the way with the batter.

Bake for 16-19 minutes. Let them set for 10 minutes to cool. If you try to remove them from the pan too early they will crumble.

Note: they are best stored in the fridge/ freezer.
