Rainbow (no mayo!) Tuna Salad

So, I love tuna salad, but any tuna with mayo does not sit well me be and feels a little too heavy so I create this recipe for a lighter tuna salad. It is all veggies and tuna, can be paleo/whole 30/keto. I used to take tuna salad to school when I was young all the time, but only one of my friends would sit next to me because they didn’t like the way it smelled, but never the less I still love it! This recipe can be done a lot of different ways, if you like more of one ingredient and less of another it works with any amount of veggies you like.

Ingredients:

  • 1 can tuna (This recipe has ALOT of veggies, so if you want more tuna you can add a second can)

  • 8ish small pickles chopped (about 1/4 cup)

  • 1/4 of a red onion chopped (about 1/2 cup)

  • 2-3 Persian cucumbers shredded ( I put mine through a thick cheese grater)

  • 1 large carrot shredded

  • 2 tablespoons dijon mustard

  • 1 full lemon (juiced)

  • Salt and pepper to taste!

  • Optional sprinkle paprika on top

Directions:

Mix all the ingredients together and enjoy!
