Sweet Potato Muffins

Easy Delicious Muffins

A favorite fall treat to snack on or warm up for breakfast with a large cup of coffee!

They don’t even taste like sweet potato!

Ingredients:

  • 1 cup cooked sweet potato

  • 1 cup oat flour

  • 2 cups oats

  • 2 eggs

  • 1/2 cup date syrup (or maple syrup)

  • 1/3 cup smooth almond butter

  • 1/4 cup almond milk

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • As much chocolate chips as you want (about 1/2 cup)

Recipe:

Wash and boil 2 medium/large sweet potatoes in a large pot, on the stove until a fork goes easily through them (about 30-40 min).

Drain and remove skin from the sweet potato. Mash or place in a food processor or blender, until completely smooth.

In a stand up mixer or with a hand mixer, mix 1 cup mashed sweet potato (make sure your sweet potato has cooled), date syrup, apple cider vinegar, vanilla and almond butter.

After completely combined, add oat flour, baking powder, baking soda and mix.

Add oats until throughly combined.

Add chocolate chips.

Fill muffin tins about 3/4 of the way full. Bake for 25-27 minutes on 350.

Let cool slightly and EAT!
