Simple Guacamole (Vegan/Paleo)

Who doesn’t love guac?

Served with coconut oil cooked plantain chips

Ingredients:

  • 3-4 large avocados

  • 1/2 of a large lemon (juiced)

  • 1 lime (juiced)

  • 1/4 of an onion (red or white)

  • salt, pepper, paprika, garlic powder, cumin, cayenne (for spice)

Recipe:

Pit and mash your avocados in a medium/large bowl. Dice your onion and add it to the mix. Add the juice of a lemon and a lime. Add 1/4 teaspoon cumin, salt, pepper, and garlic. Mix and then sprinkle with paprika and cayenne to flavor.

Eat! I like to eat mine with plantain chips. My favorite are Branana Organic Plantain Chips (you can get at Whole Foods or Costco).
