Creamy “Mashed Potatoes”
These Cauliflower mashed potatoes are hardly distinguishable from classic mashed potatoes. Vegan and paleo they are a perfect side dish for those who like to indulge but also feel good after dinner.
Ingredients:
2 medium heads of Cauliflower
1 Teaspoon Coconut Oil
Salt and Pepper to taste
Recipe:
Chop cauliflower into flowerets and steam for 30 minutes, until tender.
Remove from head and let cool for 5-10 minutes.
Add cauliflower to food processor (or blender) and run on medium speed for 30 seconds. Add coconut oil and continue to blend until smooth.
Salt and Pepper to taste!
